Cary Kelly (@CaryKelly11) says sourcing American Wagyu got them a steak at $35/lb (roughly one-third the cost of Japanese Wagyu). They assert the cut outperforms American prime ribeye and, despite costing slightly more than their typical filet mignon price, judge it "totally worth it" for the quality.
How could I resist this steak?
If you can source American Wagyu, you can get some pretty sweet deals. This cost me about a third of what Japanese Wagyu costs and it blows any American prime ribeye out of the water.
$35/lb is slightly more than I would pay for filet mignon and totally worth it.
